Pasta alla gricia

Pasta alla gricia is the template for the greatest pasta dishes of Central Italy’s tradition. Indeed, gricia is often referred to as a carbonara with no egg or an Amatriciana with no tomato sauce. But don’t be fooled by its humble look and simplicity: using just a handful ingredients, gricia – if cooked well – is insanely tasty and addictive.

The key ingredients: “guanciale” and Pecorino Romano

Guanciale, the cured pork cheek, is the main key ingredient for gricia: its rich, delicate fat and subtle spice melt into the pasta, creating a silky, savory base that’s quite different from bacon. Grated Pecorino Romano (sheep cheese), aged and sharply salty, binds the dish together, its briny depth and creamy texture coating pasta in a luxurious, umami-packed embrace.

Together, they transform a handful of ingredients into a dish that’s both rustic and refined.

Can you make a plant-based gricia?

The simple answer is yes. You won’t have the same hues of flavor as with guanciale, but the vegan market today offers some pretty amazing substitutions for bacon and similar fatty meats. Here we have used just that, with original grated Pecorino Romano.

Equipment

Ingredients

  • 160 g short pasta (penne, mezze maniche, or maccheroni)

  • 1 pinch coarse salt

  • 3 tablespoons extra-virgin olive oil

  • 1 pack vegan bacon (diced)

  • 3 tablespoons grated Pecorino Romano

  • Salt and pepper, to taste

Cook the pasta

Bring a pot of water (3.5 litres) to the boil in a pasta pot. When the water starts to boil, add a pinch of coarse salt, then add the pasta. Cook according to the instructions on the pasta package (~10-12 minutes). When al dente, take off the heat and drain the pasta.

Cook the meat

Heat the olive oil in a large skillet over low-medium heat. Add a dash of ground black pepper, then add the vegan bacon. Stir to coat and continue to cook until the pasta is ready, stirring from time to time. Before adding the pasta, turn the heat to low and add a couple of tablespoons of the pasta cooking water. Stir well.

Make the sauce and serve

Add the drained pasta to the skillet and fold the pasta into the bacon and cooking juice until it's well coated. Turn off the heat. Add the grated Pecorino Romano cheese, and continue to fold the pasta until the cheese is completely melted and forms a nice cream. Serve hot. Buon appetito!

Notes

For this recipe, use less water to boil the pasta than you would normally use, so it will become more starchy during the cooking process.
