Baked potato gnocchi

Either you’ve just home made your potato gnocchi or you bought them from the store, tomato is one of the most popular sauces for this dish. Most people simply plunge their gnocchi into heated tomato sauce and call it a day. But to make gnocchi a little delicacy, you must do a little extra step, and bake them in the oven with grated cheese. If you want something even richer, you add mozzarella for Gnocchi alla Sorrentina. Here, we have prepared them with just a dusting of grated Grana Padano cheese, and fresh basil.

Equipment

  • Sauce pot + Baking dish or Oven-proof skillet

Ingredients

  • 200 g Potato Gnocchi

  • 300 ml tomato (marinara) sauce

  • 1 garlic clove

  • 1 pinch of rock salt

  • 2 tablespoons extra-virgin olive oil

  • 1/2 teaspoon oregano

  • 2 tablespoons grated Grana Padano or Parmesan cheese

  • 5-6 fresh basil leaves

Prepare the sauce

Pre-heat the oven to 180 C (~356 F). In a sauce pot, heat the olive oil together with the oregano and the peeled garlic clove. When the garlic releases its scent, add the tomato sauce, stir, and turn the heat down to low.

Boil the gnocchi

Bring a large pot of water to the boil. Add a pinch of coarse salt, then add the gnocchi. Cook for 2-3 minutes. Take the sauce off the heat and (if using sauce pot and baking dish), transfer the sauce to the baking dish. As the gnocchi are cooked, they will float up to the surface. Use a skimmer to transfer them to the baking dish, spreading them evenly throughout the surface.

Bake

Sprinkle the gnocchi with the grated cheese. Transfer the dish to the oven and bake for 10 minutes.

Garnish and serve

Take the dish out of the oven, garnish with fresh basil leaves, and serve hot. Buon appetito!

Notes

Italian tomato sauce is the equivalent of crushed tomatoes with a little olive oil and salt. In other countries, marinara sauce often has a lot more ingredients altering the flavor of the sauce. If you cannot find an Italian brand, I suggest you used canned crushed tomatoes.
