When I have extra-carrots, this simple recipe is my go to for its delicious results. Carrots are pan-fried in butter with thinly minced garlic and dill. As they caramelize in the pan, they acquire a unmistakable decadent flavor that will just want you to go back for more. Seasoned with salt, pepper, and fresh parsley, these butter-fried carrots make for a colorful, scented, and satisfying side dish.

Here, we have served them on a bed of fresh ricotta cheese, to add a touch of creamy freshness to every bite.

Ingredients

  • 6 small carrots

  • 1 garlic clove

  • 1 tablespoon butter

  • 1/4 teaspoon dried dill

  • Salt and pepper, to taste

  • 1 tablespoon freshly minced parsley

Prep the ingredients

Peel the garlic clove and thinly mince it. Peel the carrots, chop off the ends and discard them. Slice the carrots into thin rounds.

Pan-fry the carrots

Melt the butter inside a small skillet over medium heat. Add the minced garlic and cook for 30 seconds. Add the sliced carrots and the dill, and toss to coat evenly. Continue to cook, tossing the carrots from time to time, for ~5 minutes, or until the carrots start to brown. Take off the heat.

Season and serve

Season the carrots with salt and pepper, to taste. Transfer to a small bowl, add the fresh parsley, and toss well. Serve your carrots hot or warm. Enjoy!

Notes

You can sub the butter for vegetable butter.
