Linguine al pesto are the original pasta recipe to be paired with pesto genovese. While pesto on its own is considered a condiment for pasta, the typical recipe of Liguria pairs linguine (pronounced linguin-é, not linguin-ee) pasta with potatoes and greens beans in addition to pesto. This is because pesto’s flavor can be quite overpowering. Furthermore, potatoes absorb well the oil contained in pesto, providing more balance, a creamier sauce, and nuancing the overall dish.

Equipment

  • Pasta pot

  • Strainer

  • Tongs (for serving)

Ingredients

  • 2.5 liters of water

  • 160 g linguine pasta (choose ivory pasta with coarse texture)

  • 1 pinch of coarse sea salt

  • 1 jar of basil pesto (if home made, follow our recipe)

  • 4 baby potatoes or 1 peeled medium-sized potato

  • 12 green beans

Rinse and chop the vegetables

Rinse and dice the potatoes (if you're using a medium-large potato, peel it first). Rinse the green beans, remove the stem, and chop them into 2-3 cm pieces.

Cook the pasta

Add the water to the pasta pot, together with the potatoes and the green beans. Bring to the boil over high heat. When the water starts to boil, add the coarse salt and linguine. With the help of a fork, gently help the linguini submerge while they cook, then turn down the heat to medium and continue to cook according to the package instructions for al dente cooking (~12-14 minutes).

Drain and mix in the pesto

When the pasta is al dente, drain the water and keep the pasta in the pot. Pour in the pesto and gently fold it in for the pasta to be evenly coated. With the help of pasta tongs, pinch a little linguine and wrap them around, then transfer to the serving plate. You pasta linguine al pesto are ready to eat. Buon appetito!

Notes

As pesto already incorporates cheese, no grated cheese is added here.
