Served lukewarm or chilled, and seasoned with a little olive oil, lemon juice, and minced fresh herbs, they make for the perfect side or a light meal that will leave you hydrated in a hot summer day.

Ingredients

  • 1 large zucchini

  • 1 tablespoon extra-virgin olive oil

  • 1 tablespoon lemon juice

  • Salt and pepper, to taste

  • 8-10 leaved fresh basil

  • 8-10 leaves fresh mint

Instructions

Prepare the zucchini and herbs

Rinse well the zucchini. Chop off the ends and discard them, Slice them into large chunks. Rinse the fresh herbs leaves, pat them dry, and finely slice them.

Cook

Transfer the zucchini to the vegetable steamer (or use a pot of water if you wish to boil them instead) and steam for 10 minutes, until fork tender.

Cool down and season

Take the zucchini off the heat, transfer them to a mixing bowl, and set them aside to cool down. When they are at room temperature, season with olive oil, lemon juice, and fresh minced herbs. Gently mix. You can serve at room temperature or chill them in the fridge for 30 minutes.

Notes

Steamed or boiled zucchini might result bitter if they're cooked for too long. If your zucchini are overcooked, add thinly sliced garlic clove to the spices: it will mask the bitter aftertaste.
