Equipment

  • Mixer or blender

Ingredients

  • 1 1/2 cups cooked chickpeas, drained and rinsed

  • 1 garlic clove

  • 1/3 cup smooth tahini

  • 1/3 cup water (or more, as needed)

  • 1/2 teaspoon sea salt

  • 1 teaspoon ground cumin

  • 1/2 teaspoon ground coriander

  • 2 tablespoons lemon juice

  • 2 tablespoons extra virgin olive oil

  • A dash of sumac or paprika (to serve)

  • Fresh parsley or other fresh herbs (optional, to serve)

Instructions

Blend all the ingredients

Put all the ingredients in a blender. Blend until very smooth. If the consistency is too thick, add a little water and blend again until you obtain the desired texture.

Garnish and serve

Transfer to a serving plate and garnish with sumac, paprika, or fresh herbs. You can serve with warm pita bread, crackers, or crudité (raw vegetables cut into sticks). If storing, place in a container with a lid and drizzle the top with olive oil.
