Snezhanka salata (“Snow White Salad”) is a popular salad from Bulgaria that you can also find in several variations throughout Eastern Europe. and Russia. You might know it as Mlechna Salata, Салата Снежанка, Tarator, or Milk Salad. It’s a refreshing salad that sits at the intersection with a dip, and owes its name from its white appearance, that is given by the Skyr-type yogurt at the base of its thick sauce.
Its main ingredients are diced cucumbers, crushed walnuts, garlic, fresh dill, oil, salt, and the Bulgarian staple: yogurt. Refreshing and light, it’s a summer staple of Eastern European plates, and is also used to calm the palate from spicy dishes.
