As a popular Italian saying goes, “The farmer doesn’t want anyone to know how good cheese and pears are.” There’s a good reason for that: pears are sweet and they pair very well with cheeses such as Grana Padano, Parmigiano Reggiano, and even Feta. This salad is a sweet and tangy mix, with Greek feta, crunchy walnuts and a drizzle of honey.

Equipment

  • Knife

Ingredients

  • A handful mixed salad

  • A handful mache

  • 1 pear (any type you like)

  • 30 g Greek feta cheese (you can use vegan feta as well)

  • A handful walnuts

  • 2 tablespoons extra-virgin olive oil

  • 1 tablespoon Balsamic vinegar

  • Salt and pepper, to taste

  • 1 teaspoon honey or maple syrup (I used thyme honey)

Instructions

Prep the ingredients

Rinse the lettuce and mache, and gently pat them dry. Peel and core the pear, and slice it. Dice the feta or crumble it with your hands. Coarsely chop the walnuts. Toss everything together in a mixing bowl.

Season

In a small cup, whisk together the olive oil and balsamic vinegar, and season with salt and pepper. Pour over the salad and mix gently. Finally, drizzle with a little honey or maple syrup.

Serve

Serve fresh, accompanied by a slice of rustic bread. Enjoy!
