French potato purée is easily recognized because of its smooth and silky texture. Compared to mashed potatoes, it’s light and airy, making it a perfect side dish or a creamy base to almost anything. To make a good purée, you’ll need potatoes with a floury texture, milk (you can sub cow’s milk with unsweetened soy milk) and butter. The result all depends on proportions: 10% butter, 20-30% milk.

Equipment

  • Large pot (like a stock pot)

  • Potato masher (for better results, use a vegetable press or squeezer)

  • Sauce pot

Ingredients

  • 1 kg floury-paste potatoes

  • 100 g butter (or vegan butter)

  • 250 - 300 ml milk (or unsweetened plant-based milk)

  • 2 small thyme branches

  • 6 g salt

  • 1 pinch nutmeg

  • Fresh rosemary leaves (optional, to garnish)

Instructions

Cook the potatoes

Peel the potatoes and dice them into large cubes. Plunge them into a pot of cold salted water and bring to a boil. Cook for 30 to 40 minutes until fork tender.

Prepare the milk base

While the potatoes are cooking, put the milk, butter, and thyme in a sauce pot and heat it over low heat. When the butter has melted, take off the heat and set aside. Leave the thyme inside to infuse.

Mash the potatoes

Drain the water from the potatoes, then press them immediately, while they are still hot. Discard the thyme twigs from the milk, then incorporate it directly into the mashed potatoes, stirring until you obtain a smooth texture. Season with salt and nutmeg. Your purée is ready to serve. Transfer to a serving plate and decorate with a few fresh rosemary leaves. Bon appétit!

Notes

Never start cooking potatoes in hot water. Cold salted water allows for even cooking, it is the basis of a good mashed potatoes.
