Ingredients

  • 4 stalks of celery

  • 1 thinly minced onion

  • 1 tablespoon extra-virgin olive oil

  • Salt, to taste

Prep the vegetables

Rinse well the celery stalks and chop them thinly. Rinse and dice the tomatoes. Peel and thinly slice the onion.

Toss and season

Toss the celery, tomato, and onion into a mixing bowl. Season with olive oil and salt. Gently mix.

Serve

Serve fresh or chilled. It keeps a couple of days refrigerated in a closed container.

Notes

If you have problems digesting raw onion, you can dip the onion in ice-cold water for a couple of minutes before adding it to the salad. This passage will make it more digestible. Drain well before adding it back to the bowl. Season afterwards.
