Italian rice salad (known in Italy as insalata di riso) is a quintessential summer dish that is beloved across the country. What makes an Italian rice salad?

The secret to a great Italian rice salad is choosing a rice variety that holds its shape well and doesn’t become mushy when cooked and chilled. Top choices for rice salads are Italian medium-grain or long-grain varieties like Arborio, Carnaroli, or parboiled rice (riso parboiled). The rice is typically boiled in salted water until al dente, immediately rinsed under cold water to stop the cooking process and cool it down, and then drizzled with a little olive oil to keep the grains separate.

The “right” ingredients

There is no single “correct” recipe for insalata di riso; every Italian family has their own version based on regional preferences and what is available in the pantry or fridge. However, classic ingredients often include pickled vegetables (sottaceti like pickled onions, carrots, and gherkins), fresh cherry tomatoes, bell peppers, cucumbers, and black or green olives, cubed cheeses (such as mozzarella, provolone, or scamorza), canned tuna in olive oil, cubed ham (prosciutto cotto), or hard-boiled eggs.

Herbs and seasoning also are important: a rice salad typically incorporates fresh basil, parsley, extra virgin olive oil, and white wine vinegar or lemon juice.

The make-ahead meal for the beach

Insalata di riso is the ultimate make-ahead dish. It is traditionally prepared in large batches during the hot summer months and kept in the refrigerator. Italians frequently pack it for day trips to the beach, picnics in the countryside or mountains, or quick, no-cook weekday lunches at home.

Because the flavors meld together as it sits, it often tastes even better a few hours after it’s made or even the next day!

Equipment

  • Rice cooker or pot

  • Knife

  • Chopping board

  • Strainer

Ingredients

  • 200 g parboiled rice

  • 1/2 vegetable cube (optional)

  • 1/2 jar roasted peppers (yellow and red)

  • 1/4 cup green olives (pitted)

  • 2 cups fresh spinach leaves

  • 2 large slices of plant-based ham (or curated meats or your liking)

  • 1 tablespoon olive oil

  • Salt and pepper, to taste

  • 1 tablespoon of fresh oregano leaves (or 1 teaspoon dried)

Instructions

Cook the rice

Boil the rice in abundant water with the half vegetable broth cube (if using). Cook according to the instructions on the rice package (typically, for parboiled rice, is ~10 minutes). When cooked, take off the heat, drain the excess water, rinse under cold running water and transfer to a mixing bowl.

Slice and dice

Dice the roasted peppers, halve the olives, and add them to the rice. Dice the ham and them as well. Rinse well the spinach leaves, pat them dry, and slice them if too large. Transfer them to the rice bowl.

Season and chill

Drizzle with olive oil, season with salt and pepper, and add the oregano. Mix well and refrigerate for 15-20 minutes before serving. Enjoy!
