Bulgur green salad - Layered

Bulgur is a the perfect base to beef up green salads when you want a bit more substance. You can use it as a base for a layered bowl, or mix it all up and enjoy the combination. When the weather is particularly hot, bulgur is one of my go-to ingredients as you can just soften it with hot water and stay away from the stove. Its nutty flavor well complements all types of greens, such as mache and cucumber. Here, I have added red radish, black olives, diced smoked Provolone, cherry tomatoes, and a ton of fresh herbs like parsley, basil, and mint.

Equipment

Ingredients

  • 200 g bulgur wheat

  • 1 tablespoon butter

  • 1 large English cucumber

  • 6-8 red radishes

  • 3 cups mache

  • 1/2 cup black olives (pitted)

  • 6 cherry tomatoes

  • 3 slices smoked Provolone cheese

  • 1/2 cup minced fresh herbs (parsley, basil, and mint)

  • 3 tablespoons walnut oil

  • 1 tablespoon lemon juice

  • Salt and pepper, to taste

Instructions

Prepare the bulgur wheat

Put the bulgur wheat and the butter in a bowl. Add 400 ml of hot water (boil with a kettle), stir, and cover with a lid. Set aside to rest until it softens (~15 minutes).

Prepare the green salad

Rinse well all the vegetables. Chop the mache and transfer to the mixing bowl. Peel the cucumber, halve it lengthwise, slice it and transfer to the mixing bowl. Halve the cherry tomatoes, dice the Provolone cheese, and thinly slice the radishes. Transfer to the mixing bowl, add the olives, and season with the walnut oil, lemon juice, salt and pepper. Toss well to coat.

Season the bulgur wheat

Drain the remaining water from the bulgur wheat, fluff it up with a fork, and set aside for a minutes to cool down. Mix in the minced herbs.

Serve

Serve your salad: you can lay the bulgur at the bottom of the serving bowl and top with the green salad, or mix everything together before serving. Enjoy!

Notes

Optionally, you can add a thinly sliced green onion, walnuts, and avocado.
