Bell pepper tart

Tarts are real saviors in the kitchen: colored, flavorful, adaptable to all occasions: if you have a couple of spare bell peppers, this is a fabulous dish to try. Using a roll of puff pastry as a base, the filling is made of alternating “chains” of roasted peppers of different colors sitting in Parmesan cream. That’s a combination that cannot go wrong. Ready in less than one hour, it’s perfect for a quick meal or an entry to be shared with guests.

Ingredients

  • 1 roll of puff pastry

  • 2 bell peppers of different colors

  • 1 tablespoon olive oil

  • 1 pinch of dried thyme

  • 3/4 cup cream

  • 1/3 cup grated Grana Padano (or similar)

  • Salt and pepper, to taste

  • 1 tablespoon butter (for greasing)

Instructions

Roast the peppers

Preheat the oven to 180 C (358 F) degrees. Rinse well the bell peppers, core them and quarter them. Slice each quarter into strips and transfer to an oven tray covered with a parchment paper. Leave the two peppers aside from each other, grouped by color. Season with salt and pepper, drizzle with olive oil, and sprinkle with thyme. Put in the oven and roast for 20 minutes, then take them out of the oven and set aside to cool.

Prepare the cream

Whisk together the cream and Parmesan. Season with salt and pepper, and set aside.

Compose the tart

Unroll the pastry and delicately fit it into the baking dish. Pierce the bottom with the rods of a fork, then pour the cream in and spread it to evenly cover the pastry. Lay the peppers into lines of the same color, to create a stripe, then lay the next color parallel to the first one and so on, until you have finished all the peppers.

Bake

Put the tart in the oven at the same temperature and bake for 30-40 minutes. Take out of the oven and set aside to cool for 30 minutes before serving.

Notes

You can substitute the puff pastry, butter, and cheese with vegan alternatives. You can also use three peppers (adding a yellow pepper) for a more colorful tart.
