Ingredients

  • 2 pears

  • 1 banana, peeled and sliced

  • 1/2 lemon juice

  • 1 cup coconut yogurt

  • 1/2 cup chocolate and almond granola

  • 1 tablespoon dark chocolate chips

  • 2 tablespoons chocolate spread

  • 2 tablespoons maple syrup

  • 1 tablespoon cassonade

  • 1 dash of cinnamon powder

  • 2 tablespoons ginger preserve

Instructions

Cook the pears

Peel and core the pears, quarter them, and then dice them. Transfer them to a small skillet together with a tablespoon lemon juice, 1 tablespoon maple syrup, and 1 tablespoon cassonade. Turn the heat to medium and cook them for 5-6 minutes, until the start to golden. Sprinkle with a dash of cinnamon and stir gently. Cook for another couple of minutes, stirring often, while they caramelize, then take the skillet off the heat and set aside to cool.

Compose the parfait

Spread a tablespoon of ginger preserve at the bottom of each jar. Cover with a layer (2-3 tablespoons) coconut yogurt and lay the banana slices on top of it. Sprinkle with a few drops of lemon, drizzle with one teaspoon of maple syrup, and drop a few dark chocolate chips over the banana. Cover with a layer of granola. Spread a tablespoon chocolate cream on top of the granola. Spoon the pear on top of it, dividing it equally between the two jars. Cover with another layer of coconut yogurt and garnish with a little more granola on top.

Refrigerate

Refrigerate the parfait for at least one hour before serving (ideally, chill overnight). Enjoy!
