Ingredients

  • 4-6 small potatoes

  • 4 small dogs (we used vegan dogs)

  • 3 tablespoons extra-virgin olive oil

  • 1 garlic clove

  • 1 branch fresh rosemary

  • Water

  • Salt and pepper, to taste

Prep the ingredients

Rinse well the potatoes and chop them into small bite-size chunks. Cut the hot dogs into equal-size chunks. Peel the garlic clove and reduce it into a paste. Rinse the rosemary branch. Discard the woody stems and pick the leaves. Finely chop them.

Prepare the herbal base

Drizzle the olive oil in a casserole, then heat to low-medium. Add the minced rosemary and the garlic. Cook over low heat until their scent is released.

Stew the potatoes

Stir in the potatoes, mixing them gently to coat with the oil and spices. Add a little water, just enough to cover the bottom of the casserole. Move around the potatoes to make sure they're not sticking to the casserole, then cover with a lid and continue to cook for 15 minutes.

Add the dogs

Take the lid off, stir the potatoes, and the hot dogs. Continue to cook, stirring from time to time, for another 5 minutes. The potatoes should be soft and starting to melt. The hot dogs should be soft and not burnt.

Serve

Take off the heat and transfer to the serving plates. Enjoy!

Notes

If you're using potatoes with a hard skin, peel them before chopping them. Here, we left the skin on the potatoes because it was very thin.
