The pears, browned with sage and thyme honey, provide for a creamy and sweet base to a tangy filling of whipped cheese, grated Parmesan and Greek feta. Ingredients

  • 1 pie crust sheet

  • 1 large pear (or 2)

  • 1 tablespoon lemon juice

  • 1 tablespoon butter (or vegan alternative)

  • 1/2 teaspoon sage

  • Salt and pepper, to taste

  • 2 teaspoons honey (we used thyme honey)

  • 1/3 cup whipped or cream cheese (or vegan alternative)

  • 1/3 cup soy cream

  • 1/3 cup grated cheese (we used Grana Padano)

  • 1/3 cup feta cheese (or vegan alternative)

  • Fresh parsley to garnish (optional)

Instructions

Cook the pears

Peel and core the pear, the slice it thinly (we used a mandoline). Transfer the pear to a small bowl, cover with water and add the lemon juice. Allow the pears to soak for 1-2 minutes, then drain the water. Heat the butter in a small skillet, add the sage, then add the pear. Cook for 4-5 minutes, then drizzle with honey (or maple syrup) and cook for another couple of minutes, until they're slightly golden. Take off the heat and set aside.

Prepare the cheese filling

Pre-heat the oven t 180 C (~358 F). In a small bowl, whisk together the whipped cheese, soy cream, and grated cheese. Adjust with salt and pepper, to taste, and set aside. Slice the feta cheese and set aside.

Compose the quiche

Lay the pie crust in a pie dish or a baking dish. Pierce the bottom with the rods of a fork and add the pear, spreading the slices to cover the entire surface. Lay the feta cheese slices on top of it, and pour the cheese filling over it. If the dish is small, fold the excess crust over to partially cover the top.

Bake

Put the dish in the oven and bake for 45-50 minutes.

Serve

When the quiche is ready, take out of the oven and set aside for 5-10 minutes to settle. Garnish with fresh herbs and serve. Bon appetit!

Notes

As we don't use egg in this recipe, the filling won't be as compact as in a standard quiche, but it will still hold together.
