When the heat comes and you need something refreshing, there’s nothing better than a popsicle to get a boost. I find store-bought popsicles quite boring, while homemade popsicles really allow you to go wild mixing flavors and textures. All you need is a set of molds and a bit of imagination!

Today I made these red fruit iced pops to use up some strawberries. In combination with lime juice, coconut yogurt, and raspberry coulis, they are sweet and tangy, and super-refreshing! Make them in five minutes; they’re ready in three hours!

Homemade red fruit iced pops are a refreshing and healthy treat, perfect for hot days or a light dessert. This version combines the natural sweetness of fresh strawberries, the tangy zing of lime juice, the rich depth of raspberry coulis, and the creamy texture of coconut yogurt for a balanced, dairy-free pop.

  • 4 Popsicle molds

Ingredients

  • 6 ripe strawberries

  • 8 teaspoons raspberry coulis

  • 4 teaspoons fresh lime juice

  • 1/2 cup plant-based coconut yogurt

Instructions

Prep the fruit

Rinse well the strawberries, and slice them vertically, to make heart-shaped sections. Drizzle with lime juice.

Compose the popsicle

Fill each popsicle mold in layers, starting with a little yogurt. Drop in a couple of strawberry slices, then swirls in some coulis. Proceed like that until the mold is full. Insert the caps with the sticks to close.

Refrigerate and serve

Refrigerate for at least three hours before eating. To slide the popsicle out of the mold, pass the mold under hot running water from the sink, until you can slide it out. Enjoy your refreshing treat!

Notes

You can add one fresh mint leaf to each popsicle if desired.
