Marinated ancient tomatoes

Scroll to recipe

Supermarket shelves are dominated by uniform, flawless red orbs. Ancient tomatoes, also known as heirloom tomatoes, stand out as living relics of the past. These varieties are open-pollinated, meaning their seeds have been passed down through generations, often for over a century, preserving their unique flavors, colors, and shapes. Unlike modern hybrid tomatoes, which are bred for durability, shelf life, and disease resistance, ancient tomatoes prioritize taste and diversity. Their flesh can be sweet, tangy, or richly complex, and their appearance ranges from deep purples and vibrant yellows to striped greens.
