Linguine with grilled vegetables is one of those versatile dishes that you can use to finish up leftovers from another meal. Fun fact: you don’t need to have a sauce to enjoy a good pasta dish. For this meal, I have used a light combo: zucchini and aubergines. Here’s how to prepare it.

Equipment

  • Pasta pot

  • Strainer

  • Grilling pan or grill

  • Skillet

  • Knife

  • Tongs

Ingredients

  • 160 g linguine pasta

  • 1 white zucchini

  • 1 aubergine

  • Olive oil

  • Sea salt

  • 1 pinch of coarse salt

  • Black pepper, to taste

  • 1 garlic clove

  • Fresh herbs (thyme, parsley, and basil)

Grill the vegetables

Rinse well the vegetables, chop off the ends, and cut them into rounds. Brush the grilling pan (or the grill) with oil and heat. When its hot, add the vegetables and grill for a 1-2 minutes per side. Put aside in a plate.

Cook the pasta

Put 2.5 liters of water in a pasta pot. Bring it to the boil. When it bubbles, add the coarse salt and add the linguini. Gently pat the linguini down under the water as they soften, and separate them so they won't stick together at the ends. Cook according to the instructions on the package for al dente (~10-12 min).

Re-heat the veggies

Add 2 tablespoons olive oil in a skillet with thyme and a garlic clove (peeled and halved). Heat to medium, until the garlic releases its scent. Slice the grilled veggies into strips, then add them to the pan to re-heat them. Stir them to coat with the oil and season with sea salt. Add the basil and fresh parsley, then turn the heat to low.

Mix in the pasta

When the pasta is cooked, drain the water and transfer the pasta into the skillet. Gently fold it into the vegetables and take off the heat.

Serve

Transfer the pasta to the serving plates and season with a twist of black pepper. Enjoy your pasta hot. Buon appetito!
