Nectarine parfait

I love nectarines. I usually eat them as is, but I can always find an excuse to put them somewhere… like in a breakfast parfait. Nectarines are packed with vitamins A and C, fiber, and antioxidants, making this treat as good for you as it is delicious. Add some creamy plant-based yogurt, some crunchy red fruit granola, and you’ll have all you need to start the day with energy and substance.

Ingredients

  • 1/2 nectarine

  • 1/2 cup red fruit granola

  • 1/2 cup of plant-based yogurt

  • 1/2 banana

  • 1 teaspoon dark chocolate chips

  • 1 teaspoon strawberry coulis

Prep the fruit

Prepare the fruit by rinsing well the nectarine and dicing it or slicing it into easy-to-eat bits. Peel and slice the banana.

Compose the parfait

Start with laying the strawberry coulis to the bottom of the jar. It doesn't have to cover the bottom. Pour the first half of your yogurt: it will push the coulis to the sides and create a nice sweet base (perfect for neutral yogurt flavors). Add a layer of granola, cover with banana slices, chocolate chips and cover with the remaining yogurt. Add another layer of granola and top with the nectarine slices.

Serve

Serve immediately or (best) after chilling 15 minutes in the fridge.

Notes

For our parfait, we used two different types of plant-based yogurt: a neutral coconut base, and some raspberry and passion fruit yogurt. You can pretty much combine your favorite fruit yogurt to your liking, and use just one type in the jar.
