Endive and beet salad

The crisp, slightly bitter notes of endive meet the earthy sweetness of roasted beets, while walnuts add a touch of richness. Beyond their delightful flavors, these ingredients bring a powerhouse of nutrients to your plate: endive is packed with fiber, vitamins A and K, and folate, supporting digestion and bone health, while beets are renowned for their antioxidants and ability to promote heart health. Walnuts, rich in omega-3 fatty acids, contribute to brain and heart wellness. Together, they create a dish that’s as nourishing as it is delicious.

This endive and beet salad with walnuts is an alternative way of enjoying fresh endive with a softer, milder flavor than the traditional apple combination. Served on a bed of creamy ricotta cheese, it's the perfect companion for tofu cutlets and tempeh.
