Avocados are packed with heart-healthy monounsaturated fats, fiber, and a range of vitamins and minerals, making them a powerhouse ingredient for sustained energy and well-being. Their rise to fame mirrors a broader shift toward satisfying, healthy eating as proof that sometimes, the simplest dishes are the most rewarding.

How to choose the right avocado

The key to a perfect avocado toast starts with choosing the right avocado. Forget the old advice about color. Instead, gently press the stem end with your thumb. If it gives slightly, it’s ripe and ready to eat. If it feels very soft, it’s likely overripe, and if it’s hard, it needs a day or two on the counter. For speedier ripening, place it in a paper bag with a banana or apple.

How to slice an avocado like a pro

  • Start by placing the avocado on a stable cutting board. Hold it steady and, using a sharp chef’s knife, carefully cut lengthwise around the pit until you reach the other side. Rotate the avocado and repeat to create a full circle, then twist the two halves apart.
  • To remove the pit, gently tap it with the heel of your knife so the blade sticks into the pit. Twist the knife slightly, then lift: the pit should pop out easily. Be cautious to avoid slipping and cutting yourself.
  • With the avocado half still in its skin, make even, vertical cuts through the flesh down to the skin. For fan-shaped slices, start at the narrow end and cut outward. For cubes, make both vertical and horizontal cuts.
  • Use a spoon to gently scoop the sliced avocado flesh away from the skin in one piece. This keeps the slices intact and makes for a beautiful presentation on your toast.

Tip: For extra-thin slices, peel the avocado first, then lay the half flat-side down and slice carefully.

Ingredients

  • 4 slices of rustic bread (sourdough, cereal, or ciabatta style)

  • 1 ripe avocado

  • 1/4 lime

  • 1 tablespoon walnut oil (or olive oil)

  • 1 pinch of salt

  • Sunflower seeds (or linseed)

Toast the bread

Slice the bread and toast it to your liking in a toaster or in a hot skillet.

Slice the avocado

Halve the avocado, remove the pit, and slice the two halves into thin slices Scoop them out of its skin and lay on the top of each bread slice.

Season and serve

Drizzle each slice with a little walnut oil, sprinkle with sea salt and seeds, to your liking. Squeeze a few drops of lime on top and serve.

Notes

From this base, you can add other elements to your avocado toast, like herbs or small sprouts. You can accompany your avocado toast with a tofu or egg scramble.
