Butter and Parmesan Spinach

If you looked for a simpler side dish, you won’t probably find it. This recipe has only four ingredients: fresh spinach, butter, salt, and grated cheese. That’s it. And yet, in its simplicity, it’s delicious (and also healthy). If you have a large bag of spinach that needs using, this is the easiest way of using it up without slaving over the stove to prepare complicated dishes. Indeed, it’s ready in 5 minutes!

Here's a side that's good in every season: spinach is versatile and quick to cook, and this recipe counts on that! All you need is a handful ingredients to bring something delicious to the table. The only downside? Once wilted, spinach shrinks down to nothing, so make sure you have a lot of fresh spinach to use up.

Equipment

  • Pot or skillet

  • Wooden spoon

  • Strainer

Ingredients

  • 300 g fresh spinach

  • 1 tablespoon vegetable butter

  • 2 tablespoons grated Parmesan cheese (or Grana Padano)

  • Pinch of sea salt

Instructions

Rinse the spinach

Rinse well the spinach and pat it dry.

Cook

Heat a pot or a large skillet over low heat together with the butter. When the butter is melted, add the spinach and cover with a lid. Cook for a few minutes, take off the lid, and stir until all the leaves are wilted.

Season and serve

Take the spinach off the heat, transfer to a strainer and squeeze the excess water out. Transfer to the serving plates, season with a little salt, and top with a dusting of grated cheese. Enjoy hot or warm!

Notes

You can sub the plant-based butter with dairy butter - if using salted butter, omit the sea salt.
