Ingredients

  • 4 medium-sized potatoes

  • 2 large fennel bulbs

  • 3 tablespoons extra-virgin olive oil

  • 1 large garlic clove

  • 1 tablespoon minced fresh rosemary

  • 2 tablespoons minced fresh parsley

  • Salt and pepper, to taste

Prep the vegetables

Peel the garlic clove and halve it (if large, quarter it). Peel the potatoes, rinse them, and chop them into large chunks. Rinse the fennel bulbs, halve them, and remove the outer layer. Rinse it again, chop off the leafy ends and the hard side of the stem. Then, slice them or chop them into large chunks.

Cook

Heat the olive oil and the garlic in a skillet or a casserole over medium heat. When the garlic releases its scent, add the potatoes. Cook over medium heat for 5 minutes, stirring often the potatoes, so they won't stick to the bottom of the skillet. Make sure they're well coated with the oil. Add the fennel, stir well, then season with salt and pepper, to taste. Cover with a lid and cook for 10 more minutes, stirring from time to time.

Add the herbs and serve

Take off the heat, remove the lid, and add the minced herbs. Stir well to coat, and set aside for one minute before serving. Enjoy hot or warm. Buon appetito!

Notes

If you want, you can sprinkle with 1-2 tablespoons of breadcrumbs before serving.
