Ingredients

  • 2 small endive heads

  • 2 small cooked beetroots

  • 1/3 cup walnuts

  • 2 tablespoons olive oil

  • 1 tablespoon balsamic vinegar

  • 1 teaspoon maple syrup (or honey)

  • Salt and black pepper, to taste

  • 2 tablespoon fresh ricotta cheese (or cream cheese)

  • 1 handful fresh parsley leaves

Instructions

Prep the vegetables

Rinse the endive, then thinly slice it. Dice the beets. Crush the walnuts.

Compose the salad

Transfer the vegetables to a salad bowl. Drizzle with olive oil, balsamic vinegar, and maple syrup. Season with salt and pepper, add the parsley, and gently toss the salad.

Serve

Spread a tablespoon fresh ricotta (or cream cheese) in the serving plates. Spoon on top of it the endive salad. Serve immediately and enjoy!

Notes

If you like a bit of crunchiness, you can toast the walnuts.
