In my first year in Canada, grilled cheese got me confused a lot. I would hear people talk about it in everyday conversations, often paired with tomato soup, but I had no clue what it was. As an Italian, “grilled cheese” means something VERY different. I had to look it up on the Internet (I know, shame on me)!

It turned out that grilled cheese sandwiches are a beloved comfort food in many countries: not only they’re a staple in diners and home kitchens, in Canada and the United States, but also in the UK, where they are known as “toasted cheese” or “cheese on toast,” often made with cheddar and grilled under a broiler, in France, with a fancier version called “croque-monsieur” (made with ham and Gruyère, topped with béchamel and grilled), Australia and New Zealand (where it’s often served with Vegemite or tomato sauce), and even in India, where it is sometimes spiced up with green chutney, masala, or pickles.

Oh lala… who knew? I bet you all did. But maybe you don’t know that it exists in Italy as well: we call it a “toast”, and you can have it at any “bar” or panini stand in the country, usually filled with ham, Italian regional cheese, or even grilled vegetables.

What is grilled cheese served with?

  • Classic Pairings:
    • Tomato soup (the ultimate duo)
    • Pickles or pickled vegetables (for a tangy contrast)
    • Ketchup, mustard, or hot sauce
  • Gourmet Twists:
    • Apple slices or pear for a sweet-savory combo
    • Caramelized onions or roasted garlic
    • Bacon, ham, or prosciutto
    • Avocado, spinach, or arugula for freshness
  • Beverages:
    • Milk, hot chocolate, or tea
    • Craft beer or a crisp white wine

Hence, I took it upon me to become a perfect grilled-cheese master. Here’s the base recipe (and no kidding, it’s delicious)!

Equipment

  • Grilling pan or griddle

Ingredients

  • 2 slices of bread (sourdough, white, or whole grain)

  • 2–3 slices of cheese (I like goat cheese, white or smoked)

  • 1 tbsp butter or mayonnaise (for the outside)

  • Optional: fillings like tomato, or herbs

Instructions

Heat the pan

Heat a pan over medium-low heat.

Butter the bread

Butter one side of each bread slice.

Place the filling

Place one slice, butter-side down, in the pan. Add cheese and fillings, then top with the second slice, butter-side up.

Cook

Cook until golden brown and the cheese is melted (about 3–4 minutes per side).

Serve

Slice, garnish with some fresh herbs, and serve hot!
