You probably know it as “Greek salad”, but in Greece it’s just “horiatiki”. Born in the rural heartlands of Greece, this dish uses fresh, simple ingredients: ripe tomatoes, cucumbers, olives, and feta, all drizzled with olive oil and a sprinkle of oregano. Unlike many salads, horiatiki is never drowned in heavy dressings; its beauty lies in the quality of its components, according to Greece’s rich agricultural traditions.

Did you know? The name horiatiki means “peasant” or “village” salad, reflecting its humble origins as a meal for farmers using whatever was fresh and available. Today, it’s a staple on every Greek table, especially during the hot summer months, when the ingredients are at their peak. Some even say that the colors of the salad—red, green, white, and black—mirror the colors of the Greek flag.

Equipment

Ingredients

  • 2 ripe tomatoes

  • 1 cucumber (we used an English cucumber)

  • 1/2 feta package

  • 1/2 cup olives (Kalamata, green, or black)

  • 1 shallot (or 1/4 red onion)

  • 2 tablespoons olive oil

  • 1 teaspoon red wine vinegar

  • 1 teaspoon dry oregano

  • Salt, to taste

Instructions

Dice the vegetables

Rinse well the tomatoes and dice them. Rinse the cucumber, discard the ends, peel it, and dice it. Peel and finely slice the shallot (or the red onion). Transfer everything in a salad bowl.

Season and serve

Crumble the feta cheese on top of the vegetables. Drizzle with olive oil, then add the vinegar, oregano, and salt. Gently toss the salad and serve. Καλή όρεξη!

Notes

We suggest using olives with no pit. Also, peeling a cucumber before using it in a salad can help remove any bitter taste or tough skin, making it more enjoyable to eat.
