Is there anything more Canadian than pancakes with maple syrup? Every Canadian knows how to make them, and probably each of them has a slightly different recipe. This one is one of my favorites, because it doesn’t require eggs and makes for very light, yet fluffy pancakes. Pancake Sundays are the sweeter reason for getting out of bed on a cold weekend morning!

Equipment

  • 2 mixing bowls

  • Whisk

  • Large flat, non-stick pan (or a crepe pan)

Ingredients

  • 2 cups all-purpose flour

  • 2 tablespoons granulated sugar

  • 1 tablespoon baking powder

  • 1 pinch of salt

  • 2 cups milk (you can use soy or almond milk as well)

  • 2 tablespoons water

  • 1 teaspoon vanilla extract

  • 4 tablespoons butter (or vegan butter), melted

  • Extra butter for greasing the pan (as needed)

  • Blueberries (for garnishing)

  • Maple syrup (to drizzle over the cooked pancakes)

Instructions

Make the batter

Combine the flour, sugar, baking powder, and salt in one bowl. In another bowl, combine the milk, water, vanilla extract, and melted butter. Pour the wet ingredients into the first bowl with the dry ingredients. Gently mix with a whisk or fork until all the dry ingredients are completely incorporated.

Wait for the batter to set

Set aside the batter for 10 minutes. Give it gentle turn around the bowl with a spatula.

Cook the pancakes

Heat the pan, grease it well with butter, to cover its entire surface. Immediately pour ¼ cup of batter for each pancake. The batter might be a bit thick: you can use the back of the scoop or a spoon to gently spread it out to make the pancakes thinner (to your taste). Cook the pancakes for about 2 minutes, then flip them over and cook until there are no more bubbles.

Serve

Serve your pancakes hot. They are typically stacked one on top of the other. Top your pancake stack with fresh blueberries (or other berries of your choice), and drizzle with cold maple syrup.

Notes

This is a base pancake recipe. If you want your pancakes to have more body, you can mix in a mashed banana. Alternatively, you can add finely chopped fruit, or chocolate chips after the batter has risen.
