Blueberries, strawberries, raspberries, and mint. If this doesn’t scream forest, what does? This parfait is sweet and tangy, with all the goodness of red fruits, the crunch of granola, and a decadent bit of dark chocolate. If you feel your morning needs some extra love, this will definitely do it.

This forest parfait is a real delight: fresh strawberries and blueberries, plus a splash of raspberry coulis are the stars of this refreshing breakfast. With a base of coconut yogurt and chia seeds, we complement with crunchy granola, dark chocolate chips, and fresh mint leaves. What's not to love?

Ingredients

  • 6 strawberries

  • 1/2 cup blueberries

  • 1 cup coconut yogurt

  • 2 tablespoons chia seeds

  • 2 tablespoons raspberry coulis

  • 1/3 cup granola

  • 2 teaspoons dark chocolate chips

  • 2 teaspoons maple syrup

  • Fresh mint leaves, to taste

Instructions

Prepare the berries

Rinse well the blueberries and strawberries. Remove the stems and dried leaves from the blueberries, and the leaves from the strawberries. Slice the strawberries into thin sections.

Layer the ingredients

Start with dropping a few blueberries at the bottom of the jar. Add two tablespoons of yogurt and the chia seeds, and stir with a spoon until the chia seeds are well distributed. Add on top the strawberries and the remaining blueberries. Drizzle with a teaspoon of maple syrup, then add the mint leaves (if they're large, break them with your hands into smaller pieces or slice them). Add another layer of yogurt, and drizzle with a tablespoon of raspberry coulis. Sprinkle with some dark chocolate chips and tops with a layer of your favorite granola.

Serve

You can refrigerate overnight or enjoy it immediately.
