Falafels with lemon rice and feta cream

Falafels call for a creamy accompaniment and for a fresh, zingy companion that can compensate their spicy flavor and dry texture. One of my favorite ways of serving them is on a bed of lemon rice and a feta-based cream. Greece has the winning combination for this hybrid dish. Accompany with greens on the side, and you’ll have a complete meal that will ease your digestion after the meal.

Falafels can't really be enjoyed on their own: this Greek lemon rice makes a perfect bed to mitigate the heat and spices of falafels. The feta cream adds a layer of softness for the perfect meal.

Equipment

  • Rice cooker

  • Mixer or food blender

Ingredients

  • 12 cooked falafel patties

  • 1 cup Thai or Basmati rice

  • Juice and zest of 1/2 lemon

  • 1 tablespoon minced parsley

  • 60 g Greek feta cheese

  • 2 tablespoons soy cream

  • 2 tablespoons extra-virgin olive oil

  • Salt and pepper, to taste

  • A dash of dried dill

Instructions

Cook the rice

Place the rice, lemon zest, and lemon juice in the rice cooker. Cover with abundant water, and cover with a lid. Cook for ~15 minutes, until the water is completely absorbed and the rice is dry and fluffy. When it's ready, take off the heat, sprinkle with parsley, and season with salt and pepper.

Make the sauce

Put the feta cheese, soy cream, and olive oil in a blender and pulse until smooth. Season with salt and pepper and stir in the dill.

Compose the dish

Transfer the rice to the serving plates, and spread it to make a bed for the falafels. Add the falafels on top, and drizzle with the feta cream. You can accompany with some fresh greens to serve. Enjoy!

Notes

If you're using ready-made falafels, you'll need to cook them in a skillet with a little oil or bake them in the oven before serving them. Check on the package the most suitable cooking method for your brand.
