Ingredients

  • 1 cup green or brown lentils

  • 1 cup Basmati rice

  • 1 teaspoon ground cumin

  • 1/3 cup sunflower seed oil

  • 1 yellow onion

  • Handful fresh parsley (for garnishing)

Instructions

Cook the lentils

In a rice cooker (or a pot) cook the lentils in three cups of water for 30 minutes.

Cook the rice

Add the rice to the same pot, add the ground cumin and the salt, and cook for another 10 minutes. When the water is completely absorbed, take off the heat, fluff up the rice with a fork, and set aside to cool.

Cook the onions

While the rice is cooking, peel and thinly slice the onion. Heat the oil in a skillet over medium heat and add the onion. Cook for 7-8 minutes, stirring, until the onion starts to brown and caramelizes.

Serve

Transfer the rice to the serving plates, top with the caramelized onion, and garnish with a little fresh parsley. Enjoy!

Notes

In this recipe, we used French Puy lentils and Basmati rice. You can use brown lentils or standard green lentils, as they keep their shape in cooking. Don't use red lentils, as they will become mushy. You can also use Jasmine rice.
