Vegetable burger with carrot sauce

More than once I tried to move away from mayonnaise as a condiment for burgers and sandwiches: yes, it’s delicious, but it also easily adds up on calories. This carrot sauce is one of my favorite substitutes. It’s slightly sweet, adds creaminess and body to any dish, and it’s perfect for squeeze bottles to garnish and decorate other dishes. Plus, it’s healthy and you can indulge without remorse!

Equipment

  • Immersion mixer

Ingredients

  • 2 large carrots (or 6 small)

  • 250 ml extra-virgin olive oil

  • 50 ml water

  • 1 teaspoon turmeric powder

  • 1 tablespoon maple syrup

  • 1 tablespoon freshly squeezed lemon juice

  • 1 tablespoon rice cream (or soy cream)

  • 2 tablespoons fresh parsley (or 1 teaspoon dry)

  • Salt and pepper, to taste

Steam the carrots

Rinse and peel the carrots. Chop off the ends and eliminate them. If using large carrots, cut them into 4/6 pieces, so they will be easier to steam and to mash in the mixer. Steam the carrots for 15 minutes or until they're fork tender. You can also boil them for 20 minutes in just water.

Mix

When the carrots are cooked, transfer them to the mixing glass. Let them sit for 1-2 minutes to cool down. Then, add all the ingredients to the glass and mix until you get a smooth cream. Adjust with salt and pepper if needed, or add a little water to thin.

Use or store

Refrigerate in a jar with a lid for one hour before using. You can also store it in a refrigerated squeeze bottle for up to one week.

Notes

Classic recipes use tahini and/or chickpeas. However, that makes the sauce too thick and adds on with the calories. If you want a smoother texture, just add a splash of water and mix again, until you get the right consistency.
