Ingredients

  • 1 cup almond yogurt

  • 2 ripe peaches

  • 4 tablespoons mango coulis

Instructions

Prep the peaches

Rinse well the peaches (I keep the skin on), then quarter them, remove the pit, and thinly slice them.

Compose the popsicles

Make different layers in each mold alternating peach slices, yogurt, and mango coulis. If you feel artsy, you can swirls the coulis in the yogurt with a teaspoon handle to create whimsical patterns.

Freeze

Insert the stick in the mold, close and freeze for at least 4 hours (best results overnight) before serving.

Serve

If you're using a silicon mold, just pop out the frozen popsicle at the time of serving. If you're using plastic molds, put the popsicle mold under running hot water from the sink for a few seconds to loosen the popsicle and slide it out. Enjoy!
