Last night I prepared a chia pudding with fresh blueberries and raspberry coulis. In 5 minutes, I put together a delicious breakfast, so I can start the day without the mess in the kitchen: the magic happens in the fridge overnight.

But chia puddings aren’t only convenient for breakfast: here are some good reasons to adopt them at least once a week in your routine.

They’re rich in nutrients

Chia seeds are packed with essential nutrients:

  • Fiber: Supports digestion and helps you feel full longer.
  • Protein: Aids muscle repair and keeps energy levels stable.
  • Omega-3 Fatty Acids: Supports heart and brain health.

Equipment

  • Jar with a lid

  • Spoon

  • Knife

Ingredients

  • 1/2 cup fresh blueberries

  • 3 tablespoons chia seeds

  • 1/2 cup almond milk

  • 1/2 cup coconut yogurt

  • 1/2 tablespoon maple syrup

  • 1/2 tablespoon lime juice

  • 1 tablespoon raspberry coulis

  • Fresh mint leaves, to garnish

Prepare the blueberries

Rinse well the blueberries under cold running water, remove the wilted leaves (if any), and halve half of them.

Compose the jar

Put the whole (uncut) blueberries in the jar. Add the lime juice, maple syrup, and mix. Add the milk, chia seeds, and yogurt. Stir well so that the chia seeds are well distributed. Set aside to rest for 1 minute, then top with the remaining halved blueberries. Top with a splash of raspberry jam and a few fresh mint leaves.

Refrigerate overnight

Close the jar with its top and place in the fridge overnight. It will be ready for breakfast!

Notes

If you're using sweetened almond milk, you can omit the maple syrup.
