Strawberry salad

I love strawberries. Packed with vitamin C, antioxidants, and fiber, these colorful berries support heart health, boost immunity, and even help regulate blood sugar. As a snack, they’re a guilt-free treat that satisfies sweet cravings while nourishing your body.

Paired with fresh mint, this salad is a refreshing, nutrient-dense dish perfect for any time of day. I typically prepare it in batches and, when I have leftovers, I use them to prepare parfaits or overnight oat jars for breakfast.

Strawberry salad and mint

This recipe is so simple because strawberries are already flavorful and sweet. You can prepare this salad in batches and store it in the fridge for 2-3 days. The day after it's even more delicious, as the strawberries marinate and absorb the flavors!

Ingredients

  • 1 pack ripe strawberries

  • 1-2 tablespoons sugar (or maple syrup), to taste

  • Juice of half a lemon

  • 3-4 fresh mint leaves

Chop the strawberries

Rinse well the strawberries. Gently pat them dry, then remove the leaves and the exterior white or green parts (if any). If using small strawberries halve them; if using larger strawberries, chop them into smaller chunks (3-4 parts). Transfer them to a bowl or container with a lid.

Season

Slice and juice the lemon. Rinse the mint leaves and thinly slice them. Add them to the salad bowl, add the sugar, and mix gently. Put in the fridge to rest for a couple of hours before enjoying.

Serve

Serve fresh out of the fridge, as is or topped with a ball of ice cream of whipped cream.

Notes

If you use maple syrup, the flavor will be a bit different. I use 1 tablespoon of granulated white sugar, but you can also substitute with monk fruit or granulated fructose.
